The Fermentation Process: Please note that due to the fermentation process, many of our products may contain significantly lower amounts of sugar than what is currently indicated on the nutritional information panel. During the fermentation process, sugars in fruit and vegetables are converted by different strains of bacteria and/or yeasts into different substances such as lactic acid, carbon dioxide, alcohol or acetone. Unfortunately the NSW Food Authority Calculator does not have the ability to take this process into consideration so the sugar content displayed is for the original raw product.
